The term "soul food" gained popularity in the 1960s during the Civil Rights Movement, when African Americans embraced "soul" as a way of expressing pride in Black culture. Dishes like fried chicken, collard greens, cornbread, and black-eyed peas became celebrated symbols of resilience, creativity and community.
